Apple Celery Salad with Ginger Dressing

Ingredients

  • 3 medium red apples*
  • 2 large green apples*
  • 5 ribs celery, chopped
  • 1 pound cooked chicken, chopped

*Or any combination to yield 6 cups of chopped apples

Dressing

  • 1/4 small red onion
  • 1 clove garlic
  • 2 Tablespoons fresh ginger
  • 1 Tablespoon soy sauce
  • 2 Tablespoons ketchup
  • 2 Tablespoons rice wine vinegar
  • juice of 1 lemon or lime
  • 1/2 cup canola oil
  • fresh ground black pepper-to taste

Instructions

  1. Wash apples, but do not peel. Chop into pieces about the same size as the celery and chicken.
  2. In a large bowl combine apples, celery and chicken.
  3. In a blender mix all dressing ingredients until pureed, adding more vinegar or water if needed to thin dressing.
  4. Toss dressing over apple mixture and serve.
