Apple Glazed Butternut Squash

Ingredients

  • 2 1/2 cups butternut squash, cubed
  • 2 tablespoons apple jelly
  • 1 tablespoon brown sugar
  • 1 tablespoon trans fat free margarine
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons pecan pieces, toasted

Instructions

Fill a steamer-friendly saucepan with a 1/2-inch of water. Place steamer basket on top of the saucepan (water should not touch the bottom of the basket. Place squash cubes in the steamer basket. Cover tightly and heat to boiling; reduce heat to low and steam for 7 to 10 minutes. In a medium nonstick skillet, heat apple jelly, brown sugar, margarine and cinnamon over medium heat until sugar is dissolved. Add cooked squash cubes to apple glaze and continue to cook until glaze is thickened, about 8 to 10 minutes. Place glazed squash in a serving bowl and sprinkle with pecans.
