Apple Raisin Bread

Ingredients

  • Nonstick cooking spray
  • 2 egg whites
  • 1 egg
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup applesauce
  • 2 tablespoons reduced fat sour cream
  • 3/4 cup raisins

Glaze:

  • 3/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1 to 1-1/2 tablespoons water

Instructions

Preheat oven to 350°F. Spray a 9x5x3 loaf pan with nonstick cooking spray and set aside. In a large mixing bowl, beat egg whites, egg, sugar and vanilla until light and fluffy. In a separate bowl, sift flour, baking soda, salt and cinnamon. Add flour mixture to egg mixture alternating with applesauce and sour cream, gently stirring after each addition. Stir in apples and raisins and spoon batter into prepared pan. Bake for one hour or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes. To prepare glaze, mix powdered sugar, vanilla and water until smooth. If necessary, stir in additional water, 1/2 teaspoon at a time, until drizzling consistency. Drizzle glaze over baked bread that has cooled for 10 minutes. Remove bread from pan and cool completely on wire rack.
