Apple Walnut Cookies

Ingredients

  • Parchment paper or vegetable oil cooking spray
  • 1/4 cup trans fat-free margarine
  • 1/4 cup (2 ounces) reduced-fat cream cheese
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup diced apples (Granny Smiths work well)
  • 1/2 cup walnuts, finely chopped

Instructions

Preheat oven to 325 degrees. Line a cookie sheet with parchment paper or coat with cooking spray; set aside. In a large bowl, beat together the margarine, cream cheese, brown sugar and granulated sugar. Add the egg and vanilla and continue to beat until incorporated. In a separate bowl, combine the flour, baking soda, salt, cinnamon, nutmeg and cloves. Stir the flour mixture into the sugar mixture until smooth. The batter will be very thick. Stir in apples and walnuts. Drop dough by rounded tablespoon onto prepared baking sheet, making 32 cookies. Bake 15 minutes. Cool slightly and move to wire rack to cool completely.
