Baby Spinach and Orange Salad With Vinaigrette

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon water
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 7 1/2 ounces (about 10 cups loosely packed) baby spinach, cleaned and trimmed
  • 1 1/2 cups orange sections
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion or shallots, thinly sliced

Instructions

In a jar with a tight fitting lid combine the olive oil, orange juice, honey, vinegar, water, mustard, salt and pepper. Cover and shake to combine. In a large bowl, combine the spinach and orange sections. Add the dressing and toss to coat. Sprinkle the cheese and red onion slices on top and serve.
