Ingredients

  • Nonstick cooking spray
  • 2 tablespoons trans fat free margarine
  • 2 tablespoons (1 ounce) 1/3-less-fat cream cheese
  • 1 cup granulated sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 cup whole wheat white flour (such as King Arthur’s Whole Wheat White Flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1/2 cup skim milk
  • 2 tablespoons dark rum or 1/4 teaspoon imitation rum extract and 2 tablespoons water
  • 2 teaspoons vanilla extract
  • 2 teaspoons coconut extract

Instructions

Preheat oven to 375°F. Spray a 8x4-inch loaf pan with nonstick cooking spray and set aside. In a large mixing bowl, beat margarine and cream cheese with a mixer on medium speed; add sugar, beating well. Add egg and beat well. In a separate bowl, combine all-purpose flour, whole wheat with flour, baking powder, baking soda and salt. In a separate bowl, combine bananas, milk, rum, vanilla extract and coconut extract, stirring well. Add flour mixture to sugar mixture alternately with banana mixture, mixing after each addition. Pour batter into prepared loaf pan and bake for 50 to 60 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack for 20 minutes. Remove bread from pan and cool completely on wire rack.
