BBQ Green Beans

Ingredients

  • 1 tablespoon canola oil
  • 1/4 cup red onion, diced
  • 1 clove garlic, minced
  • 1/4 cup frozen pineapple juice concentrate, thawed
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup catsup
  • 1 pound green beans, cleaned and trimmed

Instructions

In a medium saucepan, heat oil over medium-high heat and sauté onion and garlic, about 2 minutes. Reduce heat to medium-low and add pineapple juice concentrate, brown sugar, rice vinegar and catsup. Bring to a boil, reduce heat and simmer uncovered for 15 minutes or until sauce is reduced to about a 1/2 cup, stirring occasionally. While sauce is simmering, wash green beans, remove ends. Leave beans whole or cut into 1-inch pieces. Steam 5 to 10 minutes or until crisp tender. Add beans to sauce, toss to coat and serve.
