Blueberry Cornmeal Cake

Ingredients

  • 3/4 cup cornmeal
  • 1 1/4 cup all-purpose flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 cup low fat vanilla yogurt
  • 1 egg
  • 2 tablespoons canola oil
  • 3 tablespoons applesauce
  • 1 teaspoon vanilla
  • 1 teaspoon lemon zest
  • 1 1/4 cup frozen blueberries
  • Vegetable oil cooking spray

Instructions

Preheat oven to 400°F. In a bowl combine cornmeal, flour, baking powder, baking soda, salt and sugar. Mix well. Add yogurt, egg, oil, applesauce, vanilla and lemon zest. Mix until just blended. Add blueberries and gently combine. Pour batter into an 11x7-inch pan that has been sprayed with vegetable oil cooking spray. Bake 25-30 minutes or until golden brown and firm to the touch. Cool cake slightly before cutting.
