Ingredients

Dressing

  • 3/4 cup reduced fat sour cream
  • 1/4 cup apricot preserves

Salad

  • 4 cups shredded carrot
  • 2 (8-1/4 ounce) cans pineapple tidbits, drained
  • 1/2 cup raisins

Instructions

In a small bowl or measuring cup combine sour cream and apricot preserves and set aside. In a medium bowl combine the shredded carrot, pineapple and raisins and toss. Pour dressing mixture over carrot mixture and gently toss combine. Cover and chill 30 minutes before serving.
