Cherry Chip Meringues

Ingredients

  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup dried cherries, chopped
  • 1/4 cup miniature chocolate chips

Instructions

Preheat oven to 300 degrees F. Space oven racks to accommodate two large baking sheets. Line baking sheets with parchment paper; set aside. In a small bowl or measuring cup, combine sugar and cornstarch; set aside. In a large bowl, using an electric mixer beat egg whites, vanilla and salt on medium speed until frothy. Beating constantly, add the sugar mixture, one tablespoon at a time. Beat until stiff peaks form, about 6 to 8 minutes. Scrape down the mixing bowl half way through the beating time. Using a rubber spatula, fold in cherries and chocolate chips. Drop batter by level tablespoon onto prepared baking sheets, 1 inch apart. Bake about 40 minutes, rotating sheets halfway through baking time. Cool meringues completely on baking sheets, about 20 minutes. This recipe makes 48 cookies.
