Ingredients

  • 2 tablespoons olive oil
  • 16 ounces boneless, skinless chicken breast, cut into strips
  • 3 cups onion, cut into 1-inch cubes
  • 1 1/2 cups fresh mushrooms, sliced
  • 1 1/2 cups green pepper, cut into 1-inch cubes
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can no added salt diced tomatoes, undrained
  • 3 ounces tomato paste
  • 3/4 cup dry red wine
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon black pepper
  • 6 cups hot, cooked linguine

Instructions

In a 12-inch skillet cook chicken in hot oil about 10 minutes or until light brown, turning to brown evenly. Remove chicken from skillet, reserving drippings in skillet; set chicken aside. Add onion, mushrooms, green pepper and garlic to skillet. Cook and stir about 5 to 8 minutes or until vegetables are just tender. Return chicken to skillet. Meanwhile, in a medium bowl, combine undrained tomatoes, tomato paste, wine, vinegar, sugar, salt, thyme, oregano and pepper. Pour over chicken in skillet and heat to bubbling; reduce heat. Simmer, covered, for 30 to 35 minutes. Serve over hot cooked pasta.


Yield: 6 servings (1 cup cacciatore over 1 cup pasta)
