Chocolate Peanut Butter Dessertwiches

Ingredients

  • 1/3 cup smooth peanut butter
  • 1 1/4 cups cold skim milk
  • 1 package (1.6 oz) sugar-free, fat-free instant chocolate pudding mix
  • 1 cup low fat whipped topping
  • 16 whole low fat chocolate graham crackers

Instructions

Line a 13- x 9- x 2-inch pan with foil and set aside. In a large mixing bowl, blend peanut butter and milk with an electric mixer until smooth. Slowly beat in chocolate pudding mix until blended; fold in low fat whipped topping. Pour into prepared pan; freeze until firm. Break or cut graham crackers into squares. Cut frozen pudding mixture into 16 squares; place each square between two crackers. Wrap in plastic wrap. Freeze overnight.
