Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 tablespoon minced fresh basil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon dried oregano
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 7 cups Romaine lettuce, cut into 1-inch pieces
  • 1 cup grape or cherry tomatoes, quartered
  • 3/4 cup chopped cucumber
  • 3 ounces fresh mozzarella, cut into 1/4-inch cubes
  • 1/2 cup torn fresh basil leaves
  • 1/3 cup sliced red onion

Instructions

In a small bowl, combine olive oil, vinegar, minced basil, sugar, oregano, garlic, salt, and black pepper; whisk until combined. In a large bowl place lettuce, tomato, cucumber, mozzarella cheese, torn basil leaves, and onion. Pour vinaigrette over vegetables and toss gently to coat
