Classic Potato Salad

Ingredients

  • 2 1/2 pounds red skin potatoes, cooked, cooled and cut into cubes
  • 1/3 cup cider vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/3 cup reduced fat sour cream
  • 1/2 cup reduced fat salad dressing (such as Miracle Whip Light)
  • 1 cup celery, diced
  • 1/2 cup red onion, diced
  • 2 egg hard cooked whites, chopped
  • 2 tablespoons bacon bits (such as Oscar Mayer Real Bacon

Instructions

Place cooked, cubed potatoes in a large bowl. In a measuring cup, whisk together the vinegar, salt and white pepper. Pour vinegar mixture over potatoes and stir gently. Allow potatoes to absorb the liquid; about 20 minutes. In a small bowl, combine the sour cream and salad dressing. Add the dressing mixture to the potatoes and gently toss to combine. Add the celery, onion, egg whites and bacon bits and gently stir to combine. Cover and refrigerate at least 4 hours to blend flavors and chill.
