Coleslaw Vinaigrette

Ingredients

  • 6 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 3/4 cup carrot, peeled and shredded
  • 3 tablespoons cider vinegar
  • 2 tablespoons sugar
  • 2 tablespoons canola oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

In a large bowl combine green cabbage, red cabbage and carrot. In a small bowl or measuring cup stir together vinegar, sugar, canola oil, salt and pepper until sugar is dissolved. Pour vinegar mixture over vegetables; toss to coat. Refrigerate until ready to serve.


Yield: 8 servings (about 3/4 cup per serving)
