Ingredients

  • 4 cups green cabbage, diced
  • 3/4 cup carrot, diced
  • 1/4 cup reduced fat mayonnaise
  • 3 tablespoons sugar
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Instructions

In a large bowl combine cabbage and carrot. In a small bowl or measuring cup stir together mayonnaise, sugar, vinegar, mustard, celery seed, salt and pepper. Pour dressing over vegetables and toss to coat. Refrigerate at least 2 hours before serving


Yield: 6 servings (about 1/2 cup per serving)
