Curried Chicken Salad with Pineapple and Grapes

Curried Chicken Salad

Ingredients

  • 2 3/4 cups cooked skinless chicken breast, cubed
  • 1 (8 ounce) can pineapple tidbits, drained
  • 1 cup red or green grapes, halved
  • 3/4 cup celery, chopped
  • 1/3 cup red onion, chopped
  • 1/3 cup golden raisins
  • 1/2 cup reduced fat mayonnaise
  • 1/2 cup reduced fat sour cream
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 cups Boston bibb lettuce, chopped

Instructions

In a large bowl, toss chicken breast cubes, pineapple, grapes, celery, onion and raisins. In a small bowl or measuring cup, combine the mayonnaise, sour cream, curry powder, salt and black pepper. Add dressing mixture to chicken mixture and gently mix until well combined. Serve chilled on a bed of chopped lettuce.
