Exotic Fruit Salad

Ingredients

  • 1/2 cup low fat lemon yogurt
  • 2 tablespoons reduce fat mayonnaise
  • 1 tablespoon light brown sugar
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon ground ginger
  • 1/2 large pineapple, peeled, cored and cubed
  • 1 mango, peeled, seeded and coarsely chopped (about 1 cup)
  • 2 kiwis, peeled and sliced
  • 1 papaya, seeded, peeled and cubed (about 1 cup)
  • 1 tablespoon roasted slivered almonds

Instructions

In a small bowl, blend together yogurt, mayonnaise, brown sugar, lemon peel and ginger. Cover and chill dressing at least 30 minutes. In a large bowl, gently combine pineapple, mango, kiwi and papaya. Pour dressing on top and gently toss to combine. Sprinkle with almonds.
