Heart Smart Granola

Ingredients

  • Vegetable oil cooking spray
  • 3 cups regular rolled oats
  • 1 1/4 cups wheat or bran flakes
  • 3 tablespoons flax meal
  • 1/3 cup sliced almonds
  • 1/3 cup raisins
  • 1/3 cup unsweetened apple juice
  • 1/3 cup packed brown sugar
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Instructions

Coat a 15 x 10 x 1-inch baking pan with vegetable oil cooking spray; set aside. In a large bowl stir together oats, wheat flakes, flax meal, almonds and raisins. In a small saucepan stir together apple juice, brown sugar, honey, vanilla and cinnamon. Cook and stir just until boiling. Remove from heat. Pour over oat mixture, tossing just until coated. Spread mixture evenly in prepared pan. Bake at 325 degrees F for 30 to 35 minutes or until lightly browned, stirring twice. Remove from oven and immediately turn out onto wax paper and cool completely.
