Indian Curry Stew

Ingredients

  • 1 tablespoon oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • up to 3 Tablespoons curry powder
  • 2 cups diced winter squash (ex. butternut squash)
  • 1 can (15oz) chickpeas
  • 1 cup vegetable or chicken stock
  • 1 can (15 oz) LIGHT coconut milk

Directions

  1. Sauté the onion, garlic and curry powder in oil over medium heat until onion is soft.
  2. Add in remaining ingredients and simmer until squash is cooked through, about 20 minutes. Serve over cooked brown rice.
