Ingredients

  • 1 cup raisins
  • 1 cup hot water
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups white whole-wheat flour
  • 1/4 cup plus 1/2 teaspoon granulated sugar, divided
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons caraway seed
  • 1/2 cup plus 2 teaspoons low-fat buttermilk, divided
  • 1 container (5.3 ounces) plain fat-free Greek yogurt
  • 1 large egg
  • Vegetable oil cooking spray

Instructions

Preheat oven to 350 degrees. Soak raisins in hot water until plump, about 20 minutes, and drain. Mix together all-purpose flour, whole-wheat flour, 1/4 cup sugar, baking powder, baking soda, salt, and caraway seed. In a small bowl, whisk together 1/2 cup buttermilk, yogurt, and egg. Stir liquid mixture into dry ingredients until moistened. Fold in raisins. Turn dough onto a baking sheet coated with cooking spray, kneading slightly to form into a round loaf about 7 to 8 inches in diameter. Dough will be somewhat sticky. Rub loaf with 2 teaspoons buttermilk and sprinkle with 1/2 teaspoon sugar. Cut an X about 1/2-inch deep through the top of the loaf with a knife. Bake until golden brown, about 40 to 45 minutes.
