Ingredients

  • 1 cup crushed reduced-fat vanilla wafers
  • 1 tablespoon sugar
  • 2 tablespoons trans fat-free margarine, melted
  • 1 can (14 ounces) fat-free sweetened condensed milk
  • 1 egg
  • 6 tablespoons bottled key lime juice
  • 8 tablespoons reduced-fat whipped topping
  • 8 fresh strawberries, hulls attached and sliced into a fan

Instructions

Preheat oven to 350 degrees. In a small bowl, stir together the vanilla wafer crumbs, sugar and margarine until crumbly. Press mixture over the bottom and up the sides of an 8-inch pie pan. Bake crust for 6 to 8 minutes, or until golden brown. Transfer crust to a cooling rack and let cool for at least 10 minutes before filling. In a medium bowl, whisk together the sweetened condensed milk, egg and lime juice. Pour mixture over the cooled crust. Return to the oven and bake for 10 to 15 minutes. Allow pie to cool completely. To serve, top each slice with 1 tablespoon whipped topping and garnish with 1 strawberry fan.
