Mashed Cauliflower

Ingredients

  • 8 cups cauliflower florets
  • 3 cloves garlic, peeled, cut in half
  • 1/4 cup reduced-fat sour cream
  • 1 1/2 ounces reduced-fat cream cheese
  • 3 tablespoons trans fat-free margarine
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

Place a steamer basket in a saucepan filled with a 1/2-inch of water (water should not touch the bottom of the steamer basket). Place the cauliflower florets and garlic cloves in the steamer basket. Cover and heat to boiling; reduce heat to low and steam until the cauliflower is soft, about 15 to 20 minutes. Place the drained cauliflower and garlic into a bowl and mash using a hand masher or electric mixer. Gradually add the sour cream, cream cheese and margarine and mash to desired consistency. Season with salt and black pepper and serve.
