Mashed Sweet Potatoes Hawaiian Style

Ingredients

  • 2 sweet potatoes (8 ounces each)
  • 1 ounce reduced fat cream cheese, softened
  • 2 1/2 tablespoons brown sugar
  • 1 tablespoon trans fat free margarine, melted
  • 1/4 cup drained crushed pineapple

Instructions

Preheat oven to 400 degrees F. Place sweet potatoes on a baking sheet and bake for 40 to 50 minutes or until potatoes are tender enough to easily pierce with a fork. Cool potatoes slightly and remove skins. Place cooked sweet potatoes in a large, oven safe bowl and mash with cream cheese, brown sugar and melted margarine. Once combined, stir in crushed pineapple. If needed, warm mashed sweet potatoes in the oven or microwave prior to serving.
