Napa Slaw with White Balsamic Dressing

 The dressing for our slaw recipe features white or golden balsamic vinegar. It has a slightly sweet, tangy, mellow flavor and is an aesthetically pleasing option when you don’t want the dark color of a traditional balsamic vinegar in a sauce or dressing. If you don’t have white balsamic vinegar, substitute white wine vinegar, rice wine vinegar or champagne vinegar.

Ingredients

  • 1/2 cup reduced-fat mayonnaise
  • 3 tablespoons lime juice
  • 2 tablespoons golden balsamic vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 3 1/2 cups shredded or thinly sliced Napa cabbage
  • 1 1/2 cups diced apple (Fuji or Granny Smith work well)
  • 1 cup julienned carrots
  • 1/2 cup sliced green onion
  • 1/2 cup diced red bell pepper
  • 2 tablespoons sunflower seeds

Instructions

In a bowl, whisk together mayonnaise, lime juice, vinegar, sugar, cumin, chili powder, salt, and black pepper. In a large bowl, combine cabbage, apple, carrot, green onion, and red pepper. Pour dressing over vegetables and toss to coat. When ready to serve, top with sunflower seeds.


Yield: 9 servings (about 1/2 cup per serving)
