Oatmeal Raisin Scones

Ingredients

  • Vegetable oil cooking spray or parchment paper
  • 1 cup quick-cooking or old-fashioned oatmeal
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat white flour (such as King Arthur’s Whole Wheat White Flour)
  • 1/3 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons trans fat free margarine
  • 1/2 cup low fat buttermilk
  • 1 tablespoon vanilla extract
  • 1/3 cup raisins
  • 3 tablespoons miniature chocolate chips
  • 2 teaspoons cinnamon sugar mixture

Instructions

Preheat oven to 400°F. Spray a cookie sheet with cooking spray or line it with parchment paper. In a large bowl mix oatmeal, all purpose flour, whole wheat white flour, brown sugar, baking powder and salt. Using a pastry blender or two knives, cut the margarine into the flour mixture until crumbly. In a measuring cup or small bowl, stir together the buttermilk and vanilla extract. Add the buttermilk, raisins and chocolate chips to the flour mixture and combine, being careful not to over mix. Dough will be quite sticky. Divide the dough in half. Place each half on a floured surface and lightly sprinkle with enough flour to form dough into a circle about 6 or 7-inches in diameter. Sprinkle each dough round with 1 teaspoon of cinnamon sugar mixture. Cut each circle into 8 wedges, as you would a pizza. Place scone wedges on the cookie sheet and bake for 12 to 15 minutes or until lightly golden brown.
