Orange Cornmeal Cake

Ingredients

  • Vegetable oil cooking spray
  • 1/4 cup applesauce
  • 2 tablespoons canola oil
  • 2 tablespoons low fat vanilla yogurt
  • 1 egg
  • 2 egg whites
  • 1 cup plus 3 tablespoons sugar, divided
  • 1/2 cup orange juice
  • 1 1/4 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Finely grated zest of 1 orange

Instructions

Preheat oven to 375°F. Coat an 11 x 7-inch baking dish with cooking spray. In a large bowl whisk together applesauce, oil, yogurt, egg, egg whites, 1 cup sugar and orange juice. Add flour, cornmeal, baking powder, salt and orange zest; whisk gently to combine. Pour batter into prepared pan; sprinkle top evenly with remaining 3 tablespoons sugar. Bake 25 to 30 minutes or until golden brown and firm to the touch. Cool cake slightly before cutting.
