Ingredients

  • 8 ounces dry whole-wheat penne pasta
  • 1 pound ground sirloin
  • 1 1/2 cups chopped onion
  • 3 to 4 cloves garlic, peeled, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • 1 can (28 ounces) whole plum tomatoes
  • 1 can (6 ounces) tomato paste
  • 1/2 cup red wine
  • 1/2 cup Parmesan cheese, divided
  • 1/4 plus 1/8 teaspoon black pepper, divided
  • Vegetable oil cooking spray
  • 1 cup low-fat ricotta cheese
  • 1/3 cup skim milk
  • 1 large egg, beaten
  • 1/4 teaspoon salt

Instructions

Heat oven to 375 degrees. Prepare pasta according to package directions, omitting salt and cutting cooking time by 1 to 2 minutes, as pasta will continue to bake in the oven. In a large pot or Dutch oven, over medium heat, cook beef until brown; drain fat. Add onion and garlic to cooked beef and cook 5 minutes, or until onion softens. Add oregano and cinnamon and cook an additional minute. Add whole tomatoes and juices, crushing tomatoes by hand into bite-size pieces, tomato paste, wine, and 1/4 teaspoon pepper. Cook until heated through. Remove from heat and add drained, cooked pasta; stir to combine. Spray a large baking dish with cooking spray. Place pasta mixture in prepared dish. In a medium bowl, stir together ricotta cheese, Parmesan cheese, milk, egg, salt, and 1/8 teaspoon pepper. Spread cheese mixture over pasta mixture and bake until bubbly around the edges, about 35 minutes. If a golden brown top is desired, increase oven temperature to broil and allow to cook 2 to 3 minutes.
