Ingredients

  • 7 cups thinly sliced English cucumbers or pickling cucumbers
  • 2 cups thinly sliced onion
  • 1/2 cup chopped red pepper
  • 1 1/2 cups cider vinegar
  • 3/4 cup sugar
  • 1 tablespoon pickling spices
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

Place cucumbers, onion and red peppers in a large glass bowl. In a small saucepan, combine the vinegar, sugar, pickling spices, salt and black pepper. Bring to a boil and cook for one minute. Pour over cucumber mixture, gently stir to combine and allow to cool uncovered for about 20 minutes. Cover and chill for at least 24 hours. Pickles may be stored in the refrigerator for up to one month.
