Satay Inspired Chicken Kabobs with Peanut Sauce

Ingredients

  • 3 tablespoons fresh lime juice
  • 3 tablespoons honey
  • 2 tablespoons cooking sherry
  • 3 tablespoons reduced-sodium soy sauce, divided
  • 1 tablespoon hoisin sauce
  • 1 tablespoon + 1 teaspoon canola oil, divided
  • 1 1/2 pounds boneless skinless chicken breast, cut into 36 cubes
  • 5 tablespoons peanut butter
  • 5 tablespoons water
  • 2 teaspoons brown sugar
  • 1 1/2 teaspoons Thai garlic chili paste
  • 1 teaspoon grated gingerroot1/8 teaspoon red pepper flakes, optional
  • 1 package (8 ounces) fresh mushrooms
  • 3 small bell peppers (assorted colors), cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch pieces
  • 12 (6-inch) skewers

Instructions

Combine the lime juice, honey, sherry, 2 tablespoons soy sauce, hoisin sauce and canola oil. Place chicken pieces in the marinade, toss to coat and refrigerate at least 6 hours or overnight. To prepare the peanut sauce, combine remaining soy sauce, peanut butter, water, brown sugar, garlic chili paste, ginger root and red pepper flakes, if desired. When ready to assemble kabobs, drain and discard marinade from the chicken. Thread the peppers pieces, onion pieces, mushrooms and chicken alternately, with each skewer containing 3 pieces of chicken. Prepare outdoor grill for medium-high heat and brush grill grate with remaining 1 teaspoon oil to prevent sticking. Place kabobs on prepared grill, turning frequently for 10 to 15 minutes or until an internal temperature for the chicken reaches 165 degrees. Each serving consists of 2 (6-inch) kabobs drizzled with 2 tablespoons peanut sauce.
