Simple Roasted Asparagus with Balsamic Glaze w

Ingredients

  • 1 1/2 pounds fresh asparagus
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Vegetable oil cooking spray
  • 1/3 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 2 to 3 lemon wedges (if desired)

Instructions

Preheat oven to 375 degrees. Trim woody ends of asparagus, wash spears, and pat dry with paper towel. Place asparagus on a large baking sheet; drizzle with oil, season with salt and pepper and toss to coat. Spread out spears on baking sheet. If an additional baking sheet is needed, coat with cooking spray. Roast asparagus for 10 to 15 minutes, turning once. To prepare glazed, mix vinegar and brown sugar in a small saucepan over medium heat, stirring constantly until sugar is dissolved. Reduce heat to low and simmer until glaze is reduced by half, 5 to 8 minutes. Glaze should coat the back of a spoon. Transfer asparagus to a large serving platter. If desired, sprinkle spears with the juice of 2 to 3 lemon wedges. Drizzle with balsamic glaze and serve.

Cook’s note: Reducing the glaze too far can result in a sticky, balsamic “taffy.” If this happens to you, simply warm it up in a hot water bath to bring it back to a drizzling consistency.
