Ingredients

  • 1 cup + 2 teaspoons cornmeal, divided
  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup low fat buttermilk
  • 1 egg
  • 1/3 cup + 1 tablespoon trans fat free margarine, divided

Instructions

Preheat oven to 425°F. In a large bowl combine the cornmeal, flour, sugar, baking powder and salt. Add buttermilk, egg and 1/3 cup melted margarine. Mix until just blended. Place the remaining 1 tablespoon margarine in a 9-inch round cast iron skillet and place in the preheated oven. Carefully remove the skillet from the oven once the margarine is completely melted. Distribute the margarine around the pan and sprinkle with the remaining 2 teaspoons of cornmeal. Pour the batter into the skillet, return to the oven and bake for 20-25 minutes or until golden brown and firm to the touch. Cut into 12 wedges and serve.
