Stovetop Rice Pudding

Ingredients

  • 2 cups water
  • 1 cup uncooked short grain rice (such as Arborio)
  • 2 1/2 cups skim milk
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 1/2 cup golden raisins
  • 1 tablespoon trans fat free margarine
  • 2 teaspoons vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

Instructions

In a large saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. In another saucepan, combine the cooked rice, milk and salt. Cook over medium heat for 10 minutes or until the liquid is almost absorbed. Add the sugar and raisins and continue to cook until a thick and creamy consistency is achieved. Remove from heat and add the margarine, vanilla, cinnamon and nutmeg. Serve warm or chilled.
