Ingredients

  • 1 pound ground chicken or turkey breast
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon dry sherry
  • 1/4 cup chunky peanut butter
  • 1/3 cup fat-free, less-sodium chicken broth
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar (not seasoned)
  • 2 teaspoons Sriracha sauce
  • 1 tablespoon peanut or canola oil
  • 3 cloves garlic, peeled, minced
  • 1 tablespoon finely minced gingerroot
  • 3/4 cup chopped red bell pepper
  • 3/4 cup chopped carrot
  • 4 cups cooked whole-wheat spaghetti noodles
  • 1/3 cup chopped, fresh cilantro leaves
  • 3 green onions, sliced
  • 6 lime wedges

Instructions

In a small bowl, combine ground chicken breast, soy sauce, and sherry allowing meat to marinate while preparing other ingredients. In a separate bowl, whisk together peanut butter, broth, hoisin sauce, rice vinegar, and Sriracha sauce. In a Dutch oven, heat oil over medium heat. Add chicken and cook, breaking meat into fine bits, until lightly browned; about 5 minutes. Add garlic and gingerroot and continue cooking 1 additional minute. Add bell pepper and carrot, and cook an additional 3 to 4 minutes. Add peanut butter sauce and stir to combine. Add cooked pasta and toss to coat. Add cilantro and gently toss. To serve, garnish with sliced green onion and lime wedge.
