Wilted Spinach Salad with Sweet and Sour Dressing

Ingredients

  • 6 cups spinach leaves
  • 1 cup mushroom, thinly sliced
  • 2 teaspoons olive oil
  • 3/4 cup red onion, thinly sliced
  • 2 tablespoons bacon bits
  • 1 cup fat free, reduced sodium chicken broth
  • 3 tablespoons cider vinegar
  • 3 tablespoons orange juice
  • 2 teaspoons sugar
  • 1/8 teaspoon red pepper flakes
  • 1/4 teaspoon ground black pepper

Instructions

Thoroughly wash spinach leaves and dry on paper towels. In a large bowl or on a large serving platter, arrange spinach and top with mushrooms; set aside. To prepare dressing, heat oil in a large nonstick skillet and add onions and bacon bits. Sauté over medium-high heat, stirring occasionally until onions are tender, about 4 minutes. Add broth, vinegar, orange juice, sugar, red pepper flakes and black pepper and bring to a boil. Reduce heat to low; simmer until slightly thickened (about 8 to 10 minutes), stirring occasionally. To serve, pour hot dressing evenly over spinach and mushrooms, gently toss to coat lettuce and serve immediately.
