Zucchini Gratin

Ingredients

  • 1 1/2 tablespoons trans fat free margarine
  • 8 cups thinly sliced zucchini (about 1 1/2 pounds)
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup fat free half and half cream (such as Land O Lakes)
  • 1 1/2 ounces reduced fat cream cheese
  • 1/2 cup panko (Japanese style bread crumbs), divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Nonstick cooking spray

Instructions

Preheat oven to 450° F. In a large skillet, melt margarine over medium heat; add zucchini, onion and garlic. Cook, stirring occasionally until vegetables are tender, about 6 to 8 minutes. Add the half and half and cream cheese to the vegetable mixture; stir to combine allowing the cream cheese to melt. Add the 1/2 cup panko, minus 2 tablespoons, the 1/2 cup Parmesan cheese minus 3 tablespoons, salt and pepper to the vegetable mixture; stir to combine. Spoon mixture into a shallow, 2-quart baking dish coated with nonstick cooking spray. Sprinkle top with remaining panko and Parmesan cheese. Bake until top in golden brown, about 10 to 12 minutes.
