Not sure what you’re going to do with all that leftover turkey after Thursday? These turkey salad wraps are a great way to reinvent Thanksgiving leftovers into a fresh, healthful meal — something many of us will be craving after the big holiday feast.
The recipe also works great with roast chicken you can pick up at the grocery store or deli any time of year.
TURKEY SALAD WRAPS
Yield: 4 servings (2 wraps each)
Ingredients for your Kroger shopping list:
- 2 1/2 cups cooked turkey, shredded
- 1/4 cup reduced-sugar dried cranberries
- 1/4 cup walnuts, chopped
- 1/2 cup celery, finely chopped
- 2 Tablespoons red onion, chopped
- 1/4 cup reduced-fat mayonnaise
- 1/2 cup plain, non-fat Greek yogurt
- 1/4 teaspoon white pepper
- 8 full leaves bib or romaine lettuce
Directions:
Combine turkey, cranberries, walnuts, celery, red onion, mayonnaise, Greek yogurt and white pepper. Divide mixture between 8 lettuce leaves and wrap.
