VIDEO: Jicama-Mango Salad With Spicy Lime Vinaigrette Recipe


If you’ve never tried jicama (pronounced HEE-kah-ma) before, let us introduce you to this low-calorie root vegetable.

It’s been compared to a cross between an apple and a turnip, and it can be eaten raw (add it to a veggie tray with your favorite dip or wrap it into a spring roll) or cooked (use it in a stir fry or roast it in the oven). Just be sure to peel it first since the peel is inedible.

Jicama has a mild, slightly sweet flavor and satisfying crunch that pairs well with sweet mango, citrus fruits like orange or limes, and even a little spicy heat. This recipe combines those flavors and textures, along with sliced almonds and cilantro.

The bonus? You’ll get a healthy dose of fiber and vitamin C from the jicama, mango and oranges.

Jicama-Mango Salad with Spicy Lime Vinaigrette

Yield: 4 servings

Ingredients for your Kroger shopping list:
1 jicama, peeled and julienned
2 mangoes, peeled and julienned
2 oranges, peeled and chopped
Zest of 1 lime
Juice of 2 limes (approximately 1/4 cup juice)
2 Tablespoons olive oil
1/8 teaspoon cayenne pepper
1/4 tsp salt
1/4 tsp pepper
3 tablespoons sliced almonds
4 teaspoons cilantro, chopped

Place the jicama, mango and oranges in a large bowl. In a small bowl, whisk together the lime zest, lime juice, olive oil, cayenne, salt and pepper. Drizzle the dressing over the salad and toss to make sure everything is evenly coated. Sprinkle sliced almonds and cilantro on top.

Cook’s Tip: The mango is easier to julienne when it is not fully ripe.
