A juicy slice of watermelon is pretty much the food that epitomizes summer. Refreshing. Sweet. Hydrating. Does it get any better than that? Well, maybe.

If you want to up your watermelon game for a barbecue or picnic, try this Blueberry-Watermelon Salad with Feta and Mint. The tart blueberries, salty feta, bright mint leaves and tangy vinegar perfectly compliment the melon’s sweetness. Its red, white and blue colors also add patriotic flair to a summer holiday get-together.

This salad provides a healthy amount of vitamins and antioxidants from both the berries and the melon. Watermelon’s high water content is also a good way to help you stay hydrated on a hot summer day.

One extra tip: Yes, you should always wash your watermelon before cutting into it. Even though outer rind isn’t eaten, bacteria or dirt on the surface of the rind could spread to the fruit via the knife or cutting board you are using. So, give it a thorough rinse and pat it dry before slicing into it.

Blueberry-Watermelon Salad with Feta and Mint

Yield: 8 servings

Ingredients:
3 Tablespoons olive oil
1 Tablespoon balsamic vinegar
1/2 teaspoon ground black pepper
1/4 cup finely diced red onion
8 cups diced watermelon
2 cups fresh blueberries
1/4 cup chopped fresh mint leaves
1/2 cup crumbled feta cheese

Directions:
In a large bowl, whisk together olive oil, balsamic vinegar, pepper, and diced red onion. Add the diced watermelon, blueberries, mint and feta cheese to the bowl. Gently toss to coat.
