There’s nothing better than a frozen treat on a hot day, especially they don’t need to leave you feeling guilty. These frozen yogurt berry bites are easy to make, cute as can be, and low in fat and calories.
If you are looking for ways to get your kids into the kitchen, these are simple enough for older children to make on their own. Small children can help you make them by stirring the ingredients together, spooning the mixture into the muffin cups, and choosing their favorite berries to use.
Frozen Yogurt Berry Bites
Yield: 6 servings
Ingredients for your Kroger shopping list:
1/4 cup crushed almonds or almond meal
4 Tablespoons sugar, divided
2 Tablespoons butter, melted
3/4 cup plain nonfat Greek yogurt
1/4 teaspoon vanilla
1 1/2 cups fresh chopped strawberries, raspberries, or blueberries (or whatever combination of berries you like)
Line a 6-cup muffin tin with silicone or parchment cupcake liners, or use a nonstick muffin tin. In a small bowl, stir together crushed almonds, 2 tablespoons sugar, and butter. Spoon a small amount into the bottom of each muffin cup. In a medium bowl, mix together yogurt, vanilla and remaining 2 tablespoons sugar. Spoon 2 tablespoons of mixture into each muffin cup, covering the crust. Top with fresh chopped berries. Freeze until firm, about 6 hours. To serve, remove from muffin tin and/or wrapper and leave at room temperature for 8-10 minutes.
