Ingredients:
15.5 oz. can of no-salt-added navy beans
1/4 cup cocoa powder
1/4 cup maple syrup
2 teaspoons vanilla extract
1/4 teaspoon salt
2 Tablespoons creamy peanut butter
Directions:
Drain and rinse beans. Mash beans through a fine strainer to remove skins. Combine mashed beans, cocoa powder, maple syrup, vanilla, salt, and peanut butter in a food processor. Blend until smooth, scraping down sides of food processor with a rubber spatula if needed. Hummus should look like brownie batter. Serve at room temperature or chilled with fruit or crackers. Leftovers can be covered and refrigerated for 4-5 days.
Chef’s note: A blender can be used, but a food processor will yield a smoother texture.
