Recipe & Video: White Bean Cookies With Dark Chocolate Chips

You can’t get much better than a good old-fashioned chocolate chip cookie, especially one right out of the oven. And while an occasional sweet treat is nice to enjoy, cookies certainly aren’t an “anytime” snack food.

These white bean cookies aren’t an “anytime” snack either, but they do cut out some of the unhealthy ingredients in traditional cookie recipes like butter. In this vegan recipe (if you use vegan chocolate chips), the butter is replaced with peanut butter and applesauce. Plus, the cannellini beans offer additional fiber, iron and calcium. Combined with the natural sweetness of maple syrup and that applesauce, you won’t feel bad about indulging in this treat this holiday season.


White Bean Cookies With Dark Chocolate Chip Recipe

Yield: 12 servings

15-ounce can cannellini beans, drained and rinsed
1/4 cup maple syrup
1/2 cup peanut butter
1/4 cup unsweetened applesauce
1/2 teaspoon vanilla extract
1 1/4 teaspoon baking powder
3/4 cup old fashioned oats
3 Tablespoons dark chocolate chips


Preheat oven to 350° F. Line a baking sheet with parchment paper.

Place beans, maple syrup, peanut butter, applesauce, vanilla extract and baking powder in food processor and process until well combined. Fold in oats and chocolate chips using a rubber spatula or wooden spoon. Using a cookie scoop, form 12 equal-sized cookies and place on baking sheet.

Bake for 15 minutes, until cookie bottoms are browned.
