Recipe & Video: Healthy Slow Cooker Rice Pudding

It’s crockpot season! As the weather turns cooler and fall activities ramp up, the convenience of crockpots is unbeatable. And who doesn’t love some delicious, traditional comfort food during sweater weather? This recipe for healthy slow cooker rice pudding is easy, healthy and of course, delicious! Toss in 8 simple ingredients, stir, cook for 3-4 hours and voila!

Traditional rice pudding recipes can be laden with sugar and heavy cream, but this healthy twist on a classic dessert is only 193 calories. Purple rice gets its stunning hue from anthocyanin, an antioxidant that has been linked to multiple health benefits and is packed with fiber, vitamins and minerals. Not to mention, it’s just so pretty! Dish up this smooth and creamy treat with minimal effort and maximum flavor.

Vegetable oil cooking spray
1 cup uncooked purple or black forbidden rice, rinsed
4 cups milk, 1% milkfat
1/4 cup raisins
1/4 cups packed brown sugar
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 cup assorted fresh berries


Spray slow cooker insert with cooking spray. Combine rice, milk, raisins, brown sugar, vanilla extract, cinnamon, ginger and nutmeg in the cooker. Cook on medium to high heart for 3-4 hours. Stir once per hour and cook until pudding as thick as you prefer.
