Recipe & Video: Basil Garlic Chicken Kabobs

It's grilling season! Whether you're firing up the charcoal grill in your backyard, a gas grill on your patio or balcony, or even using a stovetop grill pan inside the cool A/C, kabobs are a simple way to let the grill do what it does best and enjoy a healthy, satisfying meal. The presentation always looks inviting and they are totally customizable for your tastes or for those you're serving. Make them all veggie or choose a lean protein like chicken or shrimp. You can even let everyone choose their own combo.

For this recipe, we marinated chicken breasts for several hours in a mixture of basil, garlic, onion, red wine vinegar and olive oil to tenderize the meat and infuse it with lots of flavor. Then, we added more basil for flavor and hearty chunks of red and green peppers and onion. It couldn't be easier and it always turns out delicious. 

Basil Garlic Chicken Kabobs

Yield: 6 kabobs

Ingredients:

3 Tablespoons red wine vinegar
3 Tablespoons olive oil
2 Tablespoons chopped red onion
2 Tablespoons minced fresh basil
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds boneless, skinless chicken breasts, cut into 1½-inch cubes (total of 30)
1 large sweet red pepper, cut into 1½-inch chunks
1 large green pepper, cut into 1½-inch chunks
1 large red onion, cut into 1½-inch wedges
16 basil leaves
Special equipment: Metal or bamboo barbecue skewers (soaked in water to prevent charring)

Directions:

In a large resealable plastic bag, combine red wine vinegar, olive oil, chopped red onion, minced basil, minced garlic, salt and pepper. Seal and mix ingredients. Reopen bag and add chicken. Seal bag and shake to coat the chicken with the marinade. Refrigerate 8 hours or overnight.

Drain the chicken and discard the marinade. On 6 metal or soaked bamboo skewers, alternately thread chicken, red pepper, chicken, green pepper, chicken, red onion, chicken, basil leaf. Distribute ingredients evenly onto each of the 6 skewers. Grill, covered, over medium heat for 5-7 minutes on each side or until chicken juices run clear.
