Have a sweet tooth? A little bite of a treat sometimes is all you need to satisfy.
These easy lemon brownie bites have the texture of a dense brownie but the special sweet pucker of a lemon bar thanks to the lemon juice and zest in both the bars themselves and their pretty glaze. Yet, they're fairly low in fat and calories. How is this possible? Replacing some or all of the oil typically used in baking recipes with pureed fruit (applesauce is a popular choice) is one way to balance out the moisture without adding fat.
And where can you find unsweetened, perfectly pureed fruit without additives? Baby food! We chose mango baby food here for its mild flavor and the fact that its color wouldn't affect the look of the lemon bars. Pureed applesauce or pears would probably work well too, if you can't find mango.
Lemon Brownie Bites
Yield: 16 servings

Ingredients:
Vegetable oil cooking spray
4-ounce jar pureed mango baby food
2 Tablespoons vegetable oil
3/4 cup flour
3/4 cup sugar
1/4 teaspoon salt
2 eggs
4 Tablespoons lemon zest, divided
4 Tablespoons lemon juice, divided
1 cup powdered sugar
Directions:
Preheat oven to 350 degrees F. Spray an 8 x 8-inch baking pan with vegetable oil cooking spray. Mix the pureed mango, vegetable oil, flour, sugar and salt in a bowl. In a separate bowl, whisk together eggs, 2 Tablespoons lemon zest and 2 Tablespoons lemon juice. Add the lemon mixture to the flour mixture and beat with a hand mixer on medium speed for 2 minutes. Pour the mixture into the baking pan and bake for 25 minutes. Allow to cool.
Mix powdered sugar and 2 Tablespoons lemon zest in a medium-sized bowl. Slowly add reserved lemon juice to get the desired consistency. Spread the glaze over the brownies. Once the glaze has set, cut into 16 bars and serve..
