Recipe & Video: Summer Mocktails

A colorful drink that can be served anywhere, at any time, to anybody? Count us in!

Despite what you think, mocktails (non-alcoholic cocktails) are anything but boring. Plus, in addition to being fun, creative and delicious, they’re often less calories than their boozy counterparts.

Here are our three favorite mocktail recipes for this summer. Quick, easy and loaded with fresh fruits, these drinks are sure to impress your guests!

Raspberry Tea Cooler Mocktail

Yield: 6 servings

Ingredients:

1 pint fresh raspberries
2 cups water
2 raspberry tea bags
2 cups orange juice
2 cups sparkling water
1/2 orange

Directions:

Rinse and freeze raspberries overnight. Heat 2 cups of water to a light simmer using a teakettle. In a pot or heat-proof pitcher, pour hot water over 2 tea bags and steep for 5-7 minutes. Remove and dispose of tea bags. Cool tea on counter or in refrigerator. In a pitcher, combine cooled tea, orange juice, sparkling water, orange slices, and frozen raspberries. Cut orange into half-moon slices. Pour 1 cup of tea mixture into each glass and add ice and an orange slice.

Strawberry Mojito Mocktail

Yield: 6 servings

Ingredients:

1/4 cup lime juice, divided
12 strawberries, chopped
1 bunch fresh mint
48 ounces ginger beer, divided
3 cups sparkling water, divided
6 lime slices

Directions:

Assemble six 16-ounce glasses. To each glass, add 2 teaspoons lime juice, 2 chopped strawberries, and 4-5 mint leaves. Gently mash strawberries and mint leaves until strawberries are soft. Top each cup with 1 cup ginger beer and ½ cup sparking water. Garnish each drink with a lime wedge.

Non-Alcoholic Sangria

Yield: 6 servings

Ingredients:

1/4 cup fresh mint leaves
1 1/2 cups 100% cranberry juice
1 orange
1 8-ounce can of pineapple tidbits packed in 100% juice
3/4 cup pomegranate seeds
24 ounces (2 cans) ginger beer, chilled

Directions:

Place fresh mint and cranberry juice in a large pitcher. Gently mash mint with a spoon or a muddler. Cut orange into half-moon slices. Add pineapple and juice, orange slices, and pomegranate seeds to pitcher and stir together. Chill pitcher in refrigerator for 30-60 minutes to allow flavors to combine. Add ginger beer to pitcher and serve sangria over ice.
