Ready to kick off the New Year with healthy eating? Whether you are new to cooking or getting back in the healthy-living groove, this colorful salad is a great recipe to you get started!

Picking The Perfect Pepper

Raw bell peppers aren’t just added to this dish for a good crunch and some color. Made up mostly of water, these low-calorie veggies are packed with vitamin C and antioxidants. But not all peppers are made equal. Red, yellow and orange peppers are riper, sweeter versions of green peppers. Green, being an “unripe pepper” has a slightly bitter flavor. And, while all are excellent sources of vitamin C, the red pepper has the most at 150 mg of vitamin C in a single medium sweet red pepper.

Making The Most Of Leftovers

Since this recipe makes 12 servings, it is perfect to meal prep! Simply portion out each serving into separate leftover containers to have ready-made lunches for yourself or members of your family. Looking to scale down the recipe? Instead of buying less bell peppers, chop up the extra halves and freeze for a different recipe (or the next time you make this salad).

Confetti Salad With Lime-Cilantro Dressing

Yield: 12 servings (about 2/3 cup per serving)

Ingredients:

Salad:

1 large yellow bell pepper, diced
1 large orange bell pepper, diced
1 large red bell pepper, diced
1/2 cup red onion, diced
12 ounces frozen peas, thawed
12 ounces frozen corn, thawed
14.5-ounce can Great Northern beans, drained and rinsed

Lime-Cilantro Dressing:

1/4 cup olive oil
4 Tablespoons lime juice
1 Tablespoon lime zest
1 1/2 Tablespoons honey
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup fresh cilantro, chopped

Directions:

In a large bowl, toss together diced peppers, red onion, peas, corn and beans. Set aside. In a small bowl, whisk together olive oil, lime juice, zest, honey, salt, pepper and cilantro. Pour over the vegetable mixture and stir well. Cover and refrigerate for 4 hours before serving.

Nutritional Information Per Serving: 171 calories; 5 grams fat; 0.5 grams saturated fat; 0 mg cholesterol; 102 mg sodium; 26 grams carbohydrates; 6 gram fiber; 6 grams protein
