VIDEO: Heart Smart® Slow Cooker Minestrone Soup Recipe

“Soup puts the heart at ease, calms down the violence of hunger, eliminates the tension of the day, and awakens and refines the appetite.”

So once declared famous historic French chef Auguste Escoffier, and we couldn’t agree more. Soup is one of the great comforts of life, as well as providing nourishment and hydration.

This simple, filling Heart Smart® minestrone soup features lots of vegetables, which are essential for a heart-healthy diet. In fact, soup is a great way to work more servings of vegetables into your diet. It comes together in a slow cooker and simmers all day, with a few finishing touches to bring it all together a half-hour before serving.
