Recipe: Lighter Spinach Artichoke Dip


Classic spinach artichoke dip is a real crowd pleaser, especially at parties or game nights. There’s no denying that. But it can also be a ooey-gooey bomb of unnecessary fat and calories. Not all hope is lost, though. Get that creamy texture with lower fat dairy options like plain yogurt and light sour cream, and just enough cheese to add flavor. Balance it all out with more of those two starring veggies — vitamin-packed spinach and fiber-rich artichokes.

The final way to make it a healthier treat — serve with low or no-salt tortilla chips, whole-grain crackers or pita chips, or even crisp, fresh-cut vegetables.

Lighter Spinach Artichoke Dip

Yield: 8 servings


One 10-oz. box frozen chopped spinach, thawed and drained
One 12-oz. bag frozen artichoke hearts, thawed, drained and chopped
4 scallions, chopped
1/4 cup grated parmesan cheese
1/4 cup shredded Monterey Jack cheese
1/4 cup mayonnaise
1/4 cup plain nonfat yogurt
1 cup light sour cream
Pinch black pepper, garlic powder, cayenne pepper to taste


Preheat oven to 375 degrees F. Combine all ingredients in a large bowl and transfer to a baking dish. Bake until hot and bubbly, approximately 20 minutes. Serve with tortilla chips or whole-grain crackers.
