Apple Coffee Cake

Ingredients

  • Vegetable oil cooking spray
  • 1 cup packed brown sugar, divided
  • 2 tablespoons canola oil
  • 1/2 cup low fat buttermilk
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups Granny Smith or Fuji apples, peeled and diced
  • 1/2 teaspoon cinnamon

Instructions

Preheat oven to 375°F. Spray an 8 x 8 x 2-inch square pan with cooking spray. In a small bowl, mix 3/4 cup brown sugar, canola oil, buttermilk, applesauce, egg and vanilla. In a separate bowl, combine all-purpose flour, whole wheat flour, baking soda and salt. Stir sugar mixture into flour mixture and blend until evenly moistened. Stir in apples. Spoon batter into pan. In a small bowl or measuring cup, combine remaining 1/4 cup brown sugar and cinnamon; sprinkle evenly over top of batter. Bake 45 to 50 minutes or until wooden pick comes out clean.
